Origin: Pacari is a legendary Ecuadorian chocolate maker based in Quito, working with native Arriba Nacional cacao, one of the world’s most prized fine-aroma cacao varieties. The company’s name comes from the Quechua word for nature, reflecting its close bond with Ecuadorian biodiversity and traditional cacao genetics.  

Pacari is known for organic, biodynamic, and fair-trade practices right from bean to bar. Its focus on sustainable farming with over 4,000 cacao-growing families helps preserve small-scale agriculture and rainforest biodiversity.  

Pacari has been highly decorated in the International Chocolate Awards (ICAs) and other global competitions — winning multiple gold, silver, and bronze medals over the years for purity and flavour innovation, even in high-percentage dark bars.

Taste: Pacari’s 100% cacao expresses the pure character of Ecuador’s Nacional bean — often described as rich, floral, earthy and deeply aromatic, with subtle natural sweetness even without sugar. The complexity can include hints of citrus, tropical fruit, or floral notes depending on the specific harvest and terroir.

Cacaosuyo Rupa Rupa 100%

Origin: Cacaosuyo’s Rupa Rupa 100% is a bean-to-bar chocolate made in Peru, using carefully selected Trinitario cacao sourced from Peruvian cacao growing regions, including the Amazon and Andean foothills near Rupa Rupa. The brand itself was founded in Lima with a mission to elevate native Peruvian cacao to the world stage.  

This bar is 100% pure cacao, without added sugar or lecithin, and is crafted to express the full nuance of its Peruvian beans. Cacaosuyo’s meticulous approach — from close work with farmers to careful selection and fermentation — ensures a chocolate that captures terroir and genetics in every bite.  

Cacaosuyo chocolates have earned International Chocolate Awards, including Regional and World Silver medals for this and other single-origin bars, highlighting their elite quality in competitive global contests.

Taste: Despite being 100% cacao, Rupa Rupa is surprisingly smooth and approachable. It presents notes of red fruits, citrus zest, roasted almonds and macadamia, with a long, slightly smoky finish. Its mild acidity and complex aroma make it stand out among pure cacao bars.

Marana Cusco 100%

Origin: Maraná’s Cusco 100% chocolate is made in Peru’s Cusco region, from Chuncho cacao beans grown in the fertile Quillabamba Valley — a place rich in culture and cacao history at the gateway to the Andes.  

Maraná focuses on bean-to-bar craftsmanship and organic production, supporting local farmers and highlighting the authentic flavour profile of native Peruvian cacao. Their bars are fully traceable and made with respect for traditional farming practices.  .  

Taste: Expect a bold and intense cacao experience with this bar: nutty and earthy notes dominate, sometimes with hints of tropical fruit or olive-like undertones. It’s powerful, rich, and ideal for seasoned 100% cacao enthusiasts.
